Chia Seed & Date Energy Bombs
Ingredients
1 cup of medjool dates (soft)
2 tbsp of chai seeds
1/2 cup of ground almonds
1 tbsp of flax seeds
2 tbsp of cacao powder (chocolate substitute) 1 tbsp of coconut oil
2 tbsp of almond butter
Method
Measure out chai seeds, almonds (can be grounded in a blender if bought whole, or buy ground), flax seeds (not essential) and cacao powder (chocolate sub') into a bowl.
Soften dates in a mixer or I melt them to make them squishy in a pan on the hob with the coconut oil, this process is a lot easier than in a blender - it can take a while to get all the goodness out of the blender and around the blades.
Once squishy after a little stir add to bowl of ingredients then add the almond butter.
Mix until the mixture comes together, then get your hands in and make balls in your hands. Put them in the fridge to set! Done!
Store in an air tight container. Makes about 14 bombs! Enjoy!!
